Cheesy Leek and Bacon Sauce - Primal, Kid Friendly and Clean Eating
I think that bacon may be one day help create world peace, I find that people who enjoy a bacon rich diet are happy easy going individuals that make bacon not war. The great thing about bacon is that it goes with everything (well almost).
I think the flavour combination of leek, bacon and cheese is amazing, add in a herb and garlic and it is a winner
I got inspiration for this one from a weekly woman’s magazine; I liked the idea of bacon leeks and cheese so experimented and came up with my cheesy leek and bacon sauce.
Ingredients
300g leeks, finely sliced
8 rashers bacon, finely sliced
100g cream cheese
1 garlic clove minced
1 small bunch of herbs – basil, chives and parsley works well (use dried if you want)
½ cup water
Instructions
Over a medium heat cook off the bacon, you want to keep the bacon soft but make sure to break down some of the bacon fat
When the bacon nearly complete cooked add the leeks and garlic, cook this until the leeks are soft, reduce the heat if you need to so you don’t burn the garlic
In a bowl mix together the cream cheese and water, you want to work this together so that there are no lumps of cheese left, then add the herbs and mix well
Add the cheese mix to the pan with the bacon and leeks stirring to mix everything together
Allow the sauce to simmer until the water reduces by about a third, then remove from the heat.
Can be served with meat or vegetables.
