A taste of Summer

Recently I have been craving a taste of summer. The winter has been mild here in Auckland; the winter sunshine makes me crave the flavours of BBQ meats and fresh salads. It isn't quite warm enough to fire up the BBQ yet, but that doesn't mean we can't enjoy the smoky flavours of BBQ meat.

Chicken wings. Who doesn't love them?

I love chicken wings, to me, there is something very appealing about food you eat with your hands. Watching my family devour a plate of chicken wings is like sitting with Henry VIII in triplicate. Apparently, English heritage will always win out. Any meal that doesn't require cutlery is okay by me. It is a small joy that comes from having fewer dishes to clean up, but it is still a joy. These wings are a perfect combination of sweet and spicy. I love the spice of chipotle with the sweetness of the honey. For a while, I was making these wings with chipotle sauce but recently replaced this with chipotle powder for a better flavour balance and consistency.

Variety is the spice of life.

There is more than one way to cook these wings, for an extra dimension of flavour I like to cook them on the BBQ. The smoky taste from the charcoal enhances the heat from the chipotle, and the coconut sugar caramelises in a way that it just doesn't do under a grill.

These honey chipotle chicken wings are an excellent option for your weekend BBQ, Sunday UFC viewing or just because on a weeknight.

If you want to make these wings so that the 'I don't like them, they are spicy' crew you can quickly reduce or remove the chipotle and chilli powder from the recipe. If you are like me and want them to learn to love spicy food, just reduce the amount you put in.

Honey Chipotle Wings Recipe

Ingredients

1kg chicken wings

⅔ cup honey

1/4 cup coconut sugar

4 tsp. chipotle powder

1tsp. chilli powder

1 tsp. salt

1 tsp. garlic powder

1/2 cup tomato puree

2 tbsp. cider apple vinegar

2/3 cup cold water

3 tbsp. tapioca flour

Instructions

To make the sauce/glaze for the chicken wings.

Whisk together the honey, coconut sugar, chipotle sauce, chilli, salt, garlic, tomato puree and cider apple vinegar in a bowl.

Whisk in the water and tapioca flour into to sauce, mix this until there are no lumps.

Put the chicken wings in a slow cooker, pour half of the sauce over the top of the wings.

Set the slow cooker on low and cook for 3-4 hours.

For BBQ cooking

Have you BBQ set up for indirect heat, make sure that the BBQ is hot and not smoking when you are ready to finish off the wings.

Spread the wings out on the grilling grate away from your heat source.

Grill the wings for 5 - 10 minutes; brush the wings with the remaining sauce and grill for another 5 - 10 minutes, until you have.

For cooking on a grill

Preheat the on its highest setting

Spread the chicken wings out on a baking tray.

Grill the wings for 5 minutes; brush the wings with the remaining sauce and grill for another 5 minutes.

Serve hot.
