Simple meals don't have to be boring
I have been on a mission this year to make simple but tasty meals. The aim was to create recipes that can be prepared and cooked quickly on a busy weeknight.
We all struggle to make healthy and tasty meals while keeping on top of everything else in life.
This recipe is healthy, delicious and easy to make you can cook on a single pan. The preparation takes no more than 20 minutes, that is all of the slicing, dicing and mixing.
Each meal is portioned to feed four adults.
Eat it from the pan
This recipe is a little bit fancy, but in this case, fancy doesn't mean hours spent hours in the kitchen. The prep is quick and easy, and everything is quick to cook. I love making this dinner in my cast iron pan; it is oven safe and great to serve straight from the oven to the table.
Prawns are underrated
I like prawns; they are excellent protein source; they have as much protein per 100g as chicken or beef. They are also a great source of Omega 3 and 6 fatty acids, Vitamins B-6, B-12, Niacin, iron, phosphorous, copper and magnesium.

Prawn Parmesan Coodles Recipe
Ingredients
250g large prawns
fresh black pepper, to taste
1 large egg, beaten
3 tbsp. coconut flour
1 tbsp. Italian seasoning
1 tbsp. grated parmesan cheese
olive oil
1 tsp. olive oil
2 cloves garlic
1 can crushed tomatoes
salt and pepper, to taste
2 courgette, spiralized
30g mozzarella cheese, shredded

Instructions
Preheat oven to 220 degrees C/ 450 degrees F.
Coat a baking sheet with olive oil.
Put the beaten egg in one bowl, and the seasoned coconut flour in another.
Lightly season the prawns then add a few at a time in the bowl with the egg to coat.
Then into the coconut flour, then on a baking sheet.
Bake the prawns for 5 minutes on one side before turning them over to cook on the other side.
In a large oven-safe frying pan heat the olive oil over medium heat, add the garlic and cook for 2 minutes.
Add the tomatoes, seasoning and simmer for 10 minutes, add the courgettes to the sauce and stir to coat the courgette.
Add the prawns on top of the coodles and sauce then top with the cheese, grill to melt the cheese for serving.
