Roasted Pumpkin Medley Ingredients
Ingredients
1 tbsp. onion powder
1 tbsp. garlic powder
½ tsp. smoked paprika
¼ tsp. cayenne pepper
½ tsp. salt
1kg mixed pumpkins, peeled and cubed
1 tbsp. unsalted butter, melted
1 tbsp. olive oil
Instructions
Preheat oven to 200 degrees C / 400 degrees F.
In a small bowl, combine the onion powder, garlic powder, smoked paprika, cayenne, and salt.
In a large mixing bowl, toss the pumpkin cubes with butter and olive oil.
Add 1 tablespoon of the spice mixture to the bowl and toss well to coat.
Place pumpkin on a baking paper lined tray, bake for 45 minutes, and turn the pumpkin every 15 minutes.
Sprinkle with more of the spice mix before serving hot.
