Chicken and asparagus teriyaki stir fry
You have to love asparagus; it means that spring has sprung and the summer is on the way.
This is a quick and easy meal that you can put together for a weeknight. If you struggle to get the kids to eat asparagus just tell them it makes their pee smell, this usually gets them bought in.

Ingredients
Chicken and asparagus teriyaki ingredients
700g chicken breast cubed
350g asparagus, ends trimmed, cut into pieces
4 cloves garlic, minced
2 tbsp. avocado oil
¼ cup homemade teriyaki sauce
Instructions
Heat one tablespoon of the avocado oil in a large wok over a medium heat.
When the oil is hot, add the asparagus to the wok, cook it for 5 -7 minutes until it begins to crisp up, at that point add the garlic in, and cook for another minute.
Remove the asparagus from the wok and set to one side.
Turn up the heat on the wok and add the remaining oil.
Divide the chicken into two batches.
Cook the first batch of chicken, when the meat is cooked through and starts to brown it can be removed from the pan and put to one side.
Repeat with the second batch.
When the second batch of chicken is just ready, add the rest of the cooked chicken and the asparagus back to the wok.
Pour over the teriyaki sauce and cook for one minute before serving.
