What could be better than a grain free pizza base that is crisp on the bottom and still has the slight chew of real slice of pizza.

This recipe is so easy to make you will find it quicker to make and bake than traditional pizza dough.  Added bonus you can make the flatbread into garlic bread by just coating the top in garlic and olive oil before baking.

Pizza Flatbread Recipe

Ingredients

1 cup tapioca flour

¼ cup coconut flour, sifted

½ tsp unrefined sea salt

½ cup full fat coconut milk

¼ cup coconut oil

1 egg, beaten

2 tsp rosemary

3 tsp finely chopped garlic

Instructions

If you have access to a pizza stone preheat your oven as hot as it will go and put the stone in the oven.

If you don’t have a pizza stone preheat your oven to 200 degrees C/ 400 degrees F

Gently heat up coconut milk and coconut oil in a small saucepan until very warm but not boiling

Combine tapioca flour, sifted coconut flour, and salt in a large bowl.

Pour the coconut and oil mixture on top, mix until thoroughly combined.

Allow the dough to sit for a couple of minutes to cool, it will thicken slightly as it cools.

Beat in the egg into the dough.

Cut a piece of baking paper that will fit on the pizza stone or baking tray, pour the dough on to the baking paper and spread it out evenly.

Sprinkle with rosemary and garlic.

Bake for 5 - 9 minutes, this will depend on the heat of your oven, you want the pizza base set but not crispy.

When the base is set, remove it from the oven, spread the tomato puree on top, sprinkle with cheese and toppings and bake for another 5 minutes or until the cheese has melted and the base is crispy.
