Greek Meatballs
Meatballs are an easy to make and easy to freeze meal that keeps the family well fed. These meatballs have a nice balance of fruit and savoury flavours. they go great with some homemade hummus, pita breads and some feta.

Greek meatball ingredients
Ingredients
450g minced lamb
250g ground beef
2 tbsp. chives, minced
3 cloves garlic, minced
1/4 cup chopped parsley
1 egg
1 tbsp. dried mint
1 tbsp. oregano
1 tsp. salt
1 1/2 tsp. cumin
1 tbsp. cinnamon
2 tbsp. extra virgin olive oil
8 dried apricots, chopped
Instructions
Place all of the ingredients into a large bowl, use your hands to mix everything together.
Using your hands, form the meat mix into golf ball sized meatballs.
Line a baking tray (one with an edge) with baking paper.
Place the meatballs on the baking tray and bake them 220 degrees C/ 450 degrees F for 15 minutes, it may take longer depending on how big the meatballs are.
