Ingredients

500g flank steak

1 tsp. salt

1/4 cup balsamic vinegar

1 tbsp. olive oil

1 garlic clove, grated

1 tbsp. Italian spice

For the salad:

1 -1/2 cup halved cherry tomatoes

250g baby rocket

1 tbsp. balsamic vinegar

1 small clove minced garlic

1 tbsp. olive oil

1/4 tsp. salt

Instructions

In a bowl mix together balsamic vinegar, olive oil, garlic and Italian spice.

Pour the mixture over the steak and marinate in the fridge for a least 2 hours but ideally overnight.

In a bowl, combine the rocket, cherry tomatoes, balsamic vinegar, garlic, salt, and olive oil.

Preheat a griddle pan or a large frying pan over high heat.

Cook off the steak, cook to your desired doneness; when cooked let the steak rest for at least 3 minutes before slicing it up.

Plate up the salad and place the cooked steak on top of the salad to serve.
