Jamaican Stew
Jamaican food doesn't usually feature heavily in our menu; this is generally because very spicy food is not welcomed in our house.
I love the fresh and light flavours of this dish and the little kick of spice.

Jamaican Stew Ingredients
Ingredients
450g jumbo prawns, peeled and deveined
1 tbsp. jerk seasoning
1/2 tbsp. coconut oil
1 spring onion, chopped
1/4 cup onion, chopped
1/4 cup peppers, chopped
1/4 chilli pepper, seeded, and diced *
1 cup coconut milk
chopped spring onions, for garnish
Instructions
Season prawns in a bowl with jerk seasoning.
Heat a large frying pan on medium-low, add the oil and chopped vegetables, cook until soft 3 to 4 minutes.
Add the prawns, increase heat to medium and cook 3 minutes, add the coconut milk, cover and simmer until the shrimp are cooked through about 3 minutes.
Garnish with spring onions and serve.

*you can use scotch bonnet if you can stand the heat, you can add any hot pepper or chilli you want.
