Mango Coriander Chicken - Primal, Paleo and Clean Eating
Mango Coriander Chicken Recipe
Ingredients
1kg chicken thighs, cubed
1 cup chicken stock
3 garlic cloves, minced
400g can chopped tomatoes
1 mango, cubed
2 courgettes, chopped
1 jalapeno, chopped and seeded
Salt and pepper
1 tbsp. Ground cumin
½ tsp. Chilli powder
½ cup chopped coriander
Ingredients for Mango Coriander Chicken
Instructions
Place all of the ingredients except for the chopped coriander into a slow cooker, mix well.
Turn on the slow cooker on a low heat for 8 hours or on high for 4 hours.
When the chicken is tender, it is ready to serve with a sprinkle of chopped coriander.
