No Crust Quiche
I was never a fan of quiche as I found it very heavy and difficult to eat, the no crust quiche was an irresistible concept for me, all the good parts of a quiche without the heavy part. I love the simplicity of quiche now and find it a great way to use up those things hanging around in the fridge, it’s a great one for those nights when you get home late and don’t have a better food plan. The base recipe is great easy , the hard part is usually deciding what to put in it.

Ingredients
8 eggs
½cup cream
¼cup coconut flour
½cup cheese grated
Instructions
Mix together all ingredients until smooth.
Bake at 180 degrees C / 350 degrees F until golden on top – the time it takes to cook will depend on the fillings you use.
Here are a few of our favourites to get you started
- Feta and spinach – sprinkle with pumpkin seeds when it comes out of the oven
- Red pepper, ham, and mozzarella
- Bacon, cheddar and tomato
