Who could say no to meat wrapped in meat?  

Meatloaf has always been a favourite in our family, any meal that involves meat from two different animals is usually a winner.  This meatloaf is a winner in my book as it has meat and greens.  If you are looking for an easy weeknight meal this is a great option.

Rolled Meatloaf Recipe

Ingredients

1kg beef mince

3 cloves garlic, minced

½ tbsp. dried parsley

2 eggs

1/4 cup coconut flour

salt & pepper

100g ham

2 cups spinach leaves

2 cups grated cheese

1 can tomato puree

½ cup water

Ingredients

Preheat oven to 180 degrees C/ 350 degrees F.

In a large bowl mix the mince, garlic, eggs, coconut flour, salt and pepper together, using your hands is the best way to mix it.

Place a clean tea towel on your countertop with a large sheet of aluminium foil on top of it.

Spread the mince out on top of the foil, so it is even thickness and makes a rectangle.

Layer the ham, cheese and spinach out on top of the rectangle leaving space around the edges.

Carefully use the foil to roll the meat up to make the meatloaf, as you roll the meat up be sure to move the foil out of the way.

When you have rolled up the meat squeeze the ends so that the filling stays inside the meatloaf.

Place the meatloaf in a large baking dish and cover with the foil.

Bake the meatloaf for 1 hour.

Mix the tomato puree and water together.

Remove the foil from the meatloaf and pour the tomato sauce over the top.

Bake for another 15 minutes before serving.
